During the transformation of fresh garlic into black garlic (called the Maillard reaction) there is an enzymatic transformation: allyicin, the molecule responsible for the smell of garlic is degraded and then transformed into S-allyl cysteine. Black garlic is rich in vitamins B and C, calcium, zinc, potassium and phosphorus. The clove of garlic that has become black garlic sees its antioxidant effects multiply. Black garlic is known to boost immunity, it protects the cardiovascular system, it has antiviral, anti-bacterial and protective effects on the liver. The list is so long that the WHO recommends its regular consumption. Black garlic is naturally rich in vitamins B and C, calcium, zinc, potassium and phosphorus. The freshly picked garlic a few kilometers from the farm is first left in an oven for 3 weeks. This is where these pods change color and caramelize under the effect of the oven under conditions of humidity and temperatures that are kept secret.
